Chow Mein

Ingredients
- 150 g fresh, or 100g dry, egg noodles
- 160 g fresh veggies, for example:
- 40 g bean sprouts
- 40 g carrot, julienned
- 40 g thin sliced onion
- 40 g garlic chives
- 1 clove garlic
- 1 Tbsp soy sauce
- 1 tsp oyster sauce
- 1 tsp dark soy sauce
- 1/4 tsp sugar
Directions
- Soak noodles in boiling water for 2-5 minutes depending on if fresh or dry and thickness. (shoot for a little past al dente)
- Drain noodles and cut into 6 inch long pieces.
- Spread out on a cooling rack for 10 minutes to remove excess moisture
- Julienne vegetables while you wait for the noodles.
- Mix garlic, sauces, and sugar together for your stir-fry sauce.
- Heat a wok over high heat. Once it starts smoking, add some oil and stir fry the noodles.
- Once you start to see some crispy char bits on the noodles, add the veggies and stir fry.
- As you stir fry the veggies, add the sauce in 2 or 3 batches to avoid over-cooling.
- Once all the sauce has been added and things look good, take off the heat and serve.
