Ingredients
- 17g green cardamom pods
- 1g black cardamom pods (optional)
- 12g cloves
- 10g peppercorns
- 30g cinnamon sticks
- 2g nutmeg
- 3 strands mace
- 4 medium bay leaves
- 1 star anise pod
- 35g coriander seeds
- 8g fennel seeds
- 20g cumin seeds
Directions
- In a skillet over medium-low heat, dry roast the caradmom, cloves, peppercorns, cinnamon, nutmeg, mace, bay leaves, and star anise without burning until they begin to smell good.
- Transfer to a plate to cool.
- Similarly Dry roast coriander seeds until they smell good.
- Transfer to the plate to cool.
- Similarly roast fennel seeds for 30 secons then add cumin seeds. Continue until cumin begins to smell good.
- Transfer to the plate to cool.
- Once cooled to room temperature, blend all the spices in a spice grinder until powdered.
