Neapolitan Pizza Dough

  • 4 pizzas, 10-12 inches
  • 10 minutes + 3 days
  • 10 minutes

Ingredients

  • 20 oz bread flour
  • 0.4 oz salt
  • 0.3 oz instant yeast
  • 13 oz water

Directions

Prep Dough:

  1. Mix everything together and knead until incorporated.
  2. Rise in bowl at room temperature for 8-12 hours.
  3. Rest in fridge for 2-4 more days.
  4. Divide into 4 balls (this can be done before the fridge step), and let rest at room temperature for about 3 hours (long enough that they come to room temperature) before baking.

Baking:

  1. Form the dough into a pizza shape (thin middle, thick edges) and place in a cast iron pan.
  2. Put the toppings on (be conservative, don’t load sauce and toppings on, see picture).
  3. Place under a broiler until the top is done.
  4. Place over high heat on a stove until bottom is done.
  5. Enjoy!
