Neapolitan Pizza Dough
- 4 pizzas, 10-12 inches
- 10 minutes + 3 days
- 10 minutes
Ingredients
- 20 oz bread flour
- 0.4 oz salt
- 0.3 oz instant yeast
- 13 oz water
Directions
Prep Dough:
- Mix everything together and knead until incorporated.
- Rise in bowl at room temperature for 8-12 hours.
- Rest in fridge for 2-4 more days.
- Divide into 4 balls (this can be done before the fridge step), and let rest at room temperature for about 3 hours (long enough that they come to room temperature) before baking.
Baking:
- Form the dough into a pizza shape (thin middle, thick edges) and place in a cast iron pan.
- Put the toppings on (be conservative, don’t load sauce and toppings on, see picture).
- Place under a broiler until the top is done.
- Place over high heat on a stove until bottom is done.
