Teriyaki Sauce

Ingredients

  • 2 inches ginger root
  • 3 cloves garlic
  • 1 cup sake
  • 1 cup mirin
  • 1 cup soy sauce
  • 2 Tbsp cornstarch
  • 4 Tbps cold water
  • 1 Tbsp sesame seeds

Directions

  1. mince the ginger and garlic
  2. heat garlic and ginger over low heat in a little oil until fragrant (no more than 3 minutes).
  3. Add sake, mirin, and soy sauce and simmer.
  4. Reduce by 1/3.
  5. Mix cornstarch and water and drizzle mixture into reduced sauce in pan.
  6. Once you are satisfied with the thickness, toss in the sesame seeds.
  7. Put in jars and freeze until it’s time for teriyaki.
