Teriyaki Sauce

Ingredients
- 2 inches ginger root
- 3 cloves garlic
- 1 cup sake
- 1 cup mirin
- 1 cup soy sauce
- 2 Tbsp cornstarch
- 4 Tbps cold water
- 1 Tbsp sesame seeds
Directions
- mince the ginger and garlic
- heat garlic and ginger over low heat in a little oil until fragrant (no more than 3 minutes).
- Add sake, mirin, and soy sauce and simmer.
- Reduce by 1/3.
- Mix cornstarch and water and drizzle mixture into reduced sauce in pan.
- Once you are satisfied with the thickness, toss in the sesame seeds.
- Put in jars and freeze until it’s time for teriyaki.
